If you ask Spanish if they have tried a Gazpacho Soup they, would probably laugh at you. The same would happen if you ask Bulgarians whether they have tried Tarator. Tarator is Bulgarians’ favorite summer soup. It is cold and very refreshing just as Gazpacho.. Again, it is quick and easy to make and it is a great recipe to try out.
- 1 cold yogurt (500 gr./1 lbs.)
- 500 gr. of cold water
- 1/2 cucumber
- 2 cloves of garlic
- bunch of fresh dill (preferably freshly picked from your herbal garden)
- 1 tablespoon extra virgin olive oil
- salt and pepper
- walnuts for garnish (it is optional)
Beat 500 gr/1 lbs of yogurt with a fork until it is smooth and more like liquid. Pour it in a big bowl and add 500 gr./1 lbs. of water and mix them well. Add pre-cut in small cubes cucumber. Add the minced dill and the crushed two cloves of garlic. Add a tablespoon of extra virgin olive oil, salt and pepper to taste. Now the soup is ready. To garnish you can add chopped walnuts. I personally prefer with walnut but some people find it strange and don’t add them. You have the choice!
It is served cold…not room temperature…cold!
