My Win-Wine Situation

Pizza is one of the most popular dishes in many places all over the world and there is a grand variety of flavors, ingredient combinations, dough recipes and techniques to prepare a pizza. I have tried pizzas from many places all over the world from the soft and chewy pizza in Naples, the place of its modern origin, to the thinnest possible in Rome, to the “stuffiest” possible in Chicago but like the one at home- there is no other. I have found my own way to prepare pizza and the results have been amazing. I have some favorite ingredient combinations and I will share them with you.


To get started you would need to make the dough at least an hour in advance. You read it correctly- you are the ones that will make the dough. This recipe for dough is everyone’s favorite. It is so favorite that there isn’t enough- Never!

Ingredients for the dough for 2 pizzas:

  • 2 cups of wheat flour
  • 1/2 teaspoon salt
  • 2 tablespoons olive oil
  • 1 tablespoon instant yeast
  • 3, 4 tablespoons of sesame seeds

Add yeast to the flour and stir it. Add salt and olive oil, sesame seeds, and 1 cup of water.  You need to use your sense to make sure that the dough is stiff enough. If the dough is too dry- add more water. If it is too sticky- add more flour. Knead until all the ingredients are mixed well. Then cover and let it sit in a warmer place for about 1 hour.


  • Fresh Mozzarella Balls
  • Fresh Basil
  • Tomato Paste (UNICO Crushed Tomatoes)
  • Dried Oregano and Dried Basil.

After the dough has risen, you can use a wooden roller to roll it out over a foil drizzled with olive oil and sprinkled with flour. Make sure that the dough is stretched cracker-thin. Cover the dough with the tomato paste, sprinkle with the dried oregano and dried basil. Add the sliced fresh mozzarella evenly and the fresh basil leaves. Place the pizza with the foil over a flat pan. Put in a preheated oven (400 degrees) and let it bake for 20-25 min.

We usually cut the pizza in squares and serve in a big plate for everyone to grab a slice and of course a glass of white wine for that win-wine situation! Enjoy!

PS: The pizza is so delicious that even the cat stares at us for a slice.
