Baked Dill Baby Potatoes with Yogurt Dipping Sauce

Hey everyone,

this time I would like to share with you one of the simplest dishes I prepare when I  don’t have enough time to think about a different for the family recipe for dinner. It takes no time to prepare and about 30 minutes cooking time.

What is what you need for the baby potato dish:

  • Baby potatoes
  • Chopped Fresh Dill (sometimes I chop and freeze dill for cases when I don’t have fresh dill at home)
  • Salt
  • Pepper
  • Red pepper
  • 1 tablespoon Chopped Garlic from a jar or 2-3 cloves of Fresh Garlic
  • Olive Oil

For the yogurt dipping sauce:

  • Yogurt
  • 2 Cloves of freshly pressed Garlic
  • Dill
  • Olive Oil
  • 1 teaspoon  low-fat olive oil mayo.
  • 1/2 teaspoon Salt

Preparation of the potatoes:

Pre-warm the oven to 400 degrees (200 Celsius)

Wash the potatoes and put them in the baking dish. The amount of the potatoes needs to be just enough to fill the dish.Then add some olive oil and mix them up with your hands. After that you can add the salt, the pepper, the red pepper, and the garlic.Sprinkle the dill and cover the potatoes almost halfway with water. After that take a big piece of foil, big enough to cover the pot and put it in the oven to bake for about 25 minutes. In 25 minutes carefully take out the dish and see if the potatoes are soft enough to consume. If they are turn on the oven on Broil (“high” if you have that function) and put them back in without the foil to bake them a few more minutes until they turn golden brown.)

Preparation of the yogurt dipping sauce:


Whisk with a fork a cup of yogurt or the amount you believe will be enough for baby potato dish. Add the 1 tablespoon of low-fat olive oil mayo and continue whisking and one teaspoon of olive oil. Then add the salt, the freshly pressed garlic and the fresh or frozen chopped dill.

The potatoes need to be served accompanied by the cold yogurt dipping sauce. Serve it family style or pour over each portion if this is your way of serving food.
