Homemade Sunday Brunch – Sauteed Mushooms and Shrimp with Asian Rice Noodles

I woke up this morning with the inspiration to cook and since I have not written a blog on food for quite a while I decided to share with you a recipe for quick lunch that is delicious you can easily make even if you don’t have that much of experience.

So here we go!

All you need is:

  • Asian Rice Noodles
  • Mushrooms
  • Peas
  • Shrimp
  • Chopped Garlic
  • Fresh Basil
  • Green Onions
  • Olive Oil
  • Salt and Black Pepper
  • A Lemon Wedge
  • A few oz of white wine (recommended but not necessary)

Now, how to prepare:

In a frying pan on a medium heat pour a little bit of olive oil add chopped garlic. Then, add mushrooms, peas, and stir fry for a few minutes. Add the cleaned shrimp. Squeeze the lemon and pour white wine. Add salt and pepper.

Stir well and cover with a lid and simmer until it is cooked for a about 3-4 minutes, then uncover and let it cook for a couple more minutes until the juice from the mushrooms evaporates.

Meanwhile, boil the Asian rice noodles in water with olive oil and salt. See the noodles packaging for cooking directions.

Cooking Asian Rice Noodles

Once the vegetables and the shrimp is ready, add the noodles with a little bit of the boiling water in the frying pan and mix well.

When the noodles are stirred with thee veggies and the shrimp, place in a plate and garnish with green onions, and chopped fresh basil.

Your lunch with be ready within 15 minutes and would be good even for tomorrow for lunch.
